Whether you've foraged for raspberries or have some to use up from the supermarket, this Best Ever Seasonal Raspberry Syrup Raspberry Syrup recipe will be a sweet addition to summer salads and cocktails.

Best Ever Seasonal Raspberry Syrup recipe

This seasonal raspberry syrup is so versatile and will add a splash of summer fruitiness to your cocktails, salad dressings, bakes, you name it.

200g raspberries
100g sugar
150ml water
1 tbsp lemon juice

Pep up your summer cocktails and mocktails with this fresh no waste raspberry syrup


Place all of the ingredients into a saucepan over a medium heat.

Simmer for 20 minutes.

Strain using a sieve or cheesecloth and store the syrup in an airtight bottle in the fridge. 

Hold on to the leftover pulp from the raspberries to make this stunning No Waste Raspberry and Apricot Ice Cream Cake.

Foraging has to be the most eco-friendly, no waste way to source your summer fruits. 

All those hedges full of juicy blackberries and patches of wild raspberries come into their own in the second half of summer and of course anything you find in the wild, doesn't come in pesky plastic.
